Please specify your Editor. I know about Gedit2 and similar editors but I can't tell much in Vim and Emacs. I think in Vim things are not difficult especially if you use gvim and not vim. In Gedit there is a preferences dialog box where utf8 is the default character to use. I think this works for Katoob as well. I don't recall how to do it in vim or emacs right now. I think that things are similar in Kedit (correct me KDE users).
